If you've made a 2011 resolution to eat healthier.... move along, nothing to see here.
Guy and I were craving mexican yesterday and it was an easy decision to make my dear friend Sarah's chicken enchiladas. They're simple, delicious, and cheesy (the most important part)!
Start by dicing one medium onion
...and boiling 1 1/2 pounds of chicken. Shred the chicken after boiling.
Preheat the oven to 350.
In the meantime.... saute the onion in butter and add the chicken.
Right after add 1/2 cup Picante salsa, 1 tsp cumin, and 4 oz of cream cheese.
Keep on heat until warm. After, remove from heat and add 1 cup shredded cheese.
Warm tortillas in the microwave. Immediately add the chicken mixture and roll the enchiladas.
Add to a greased pan.
Top with remaining salsa and cheese.
Cook for 15 minutes, let cool, and enjoy!
