hurry up chicken pot pie

Monday was a hectic evening between my wedding dress shopping (more on that later!) and Guy visiting a family member in the hospital. We wanted to make something good but also something that wouldn't take a lot of time.
Enter Paula Deen's Hurry Up Chicken Pot Pie
For as little effort it took... it was delicious! A perfect week night meal.

Paula Deen's Hurry Up Chicken Pie
Ingredients
2 cups chopped chicken
2 hard boiled eggs (we only used one)
1/2 frozen peas
1/2 cup thinly sliced carrots
1 can cream of chicken soup
1 cup chicken broth
salt & pepper
1 1/2 cups instant biscuit mix (we used bisquick)
1 cup milk
1 stick melted butter (we used 1/2 stick)

Directions
Preheat oven to 350
In a greased 2 quart casserole dish, layer the chicken, eggs, carrots, & peas. Mix the soup & chicken broth, and season with salt and pepper.  Pour over layers. Stir the biscuit mix and milk, & pour over the casserole. Drizzle butter over the topping. Bake until the topping is golden brown, 30-40 minutes. (Ours took 50+)

In other news... the dress shopping was amazing. I loved every minute of it and found two dresses that I absolutely fell in love with. How I'm going to choose between them?? No clue. I'm going back Wednesday to try them on again.... I already can't wait!

the day has come.

Today I go wedding dress shopping! It's a little surreal actually... I mean you wait years (29 in my case) to do this and then the day comes and it feels exciting and overwhelming all at the same time.
I'm not one of those girls that has pictures cut out of her dream dress nor do I have any clue what kind of dress I want. I guess that's a good thing? It means I will try anything and everything on.
Hm. This could be a long night.
There better be champagne.
In honor of dress shopping....  I decided to take a peek at JCrew's wedding shop. There are some beauties in there! I wish I could go to their new Madison Avenue wedding shop... that would be amazing.

The first: A true story about an awful event. Antoine Dodson, however, is amazing.


The second: A song using the clip above. HILARIOUS. And the best part - Antoine gets half the proceeds. It's number 35 on the Itunes downloads if that gives you any perspective.


This completely made my day. I love the creativity around this. And I especially love that Antoine's family is benefiting from this and supposedly using the money to get out of the awful neighborhood they live in.

hi, i'm morgan

...and I'm a carb-a-holic.
That's right... my daily consumption of food is based on carbohydrates. I fully know these have little to no nutrional value and yet I can't step away from the bastards... I mean breads. And just between you and me.... it's not looking pretty on my waist line. :sigh:
Let's take yesterday as an example:
Exhibit A
An english muffin for breakfast. And this was me being good... I really wanted a bagel with cream cheese.
Exhibit B
 I thought about the bagel all morning so I made a sandwich using a bagel. I tricked myself into thinking it was just the vehicle to get me my protein.
note: my sandwich had no where near the vegetables you see above.

Not a carb but I had to make myself feel better by showing you the one healthy thing I ate all day.

I ran errands after work and had too much caffeine so I had to get one of those soft pretzels from the mall vendor. Shameful, I know. (but oh so good....)

Um, yeah. Nachos. Guy went out for the night so we weren't eating at home and I didn't feel like cooking for one. Welcome to Moe's.

Yup, so there you have it. I'm addicted to carbohydrates. I'm going to be the only bride that GAINS weight before her wedding. Someone please help me!!!

...I sleep best if I've watched an episode of The Office or Friends before I fall asleep.

oatmeal cream pies...without the cream

I love Everyday Food magazine. Every month I find a plethora of recipes I want to try. This month's was no exception. I immediately saw an oatmeal cream pie recipe.
I loved these as a child. They were my favorite.
So when I had the opportunity to make these... I jumped at the chance.
The good news is that the cookies are delicious. The bad news is the frosting was notsomuch. I made two just so you could see what they're suppose to look like.... but left the rest so they'd be edible.

I was lucky enough to spend the weekend in Omaha, NE with my brother and his family. Being with my niece & nephew is always a sound reminder that life pretty much couldn't get better.

We'll miss you Bumpkin. You were a compassionate and amazing woman. We were all lucky to have known you. I know you're swinging in your swing, watching over Captain John & your entire family.

playing with paper dolls

I knew exactly how I wanted to invite my girls to be my bridesmaids. I saw this & immediately knew I wanted to use it as inspriation for my bridesmaid invitations. I wanted something special and personal.
I started out by making four paper dolls representing my four girls who will be standing up in my wedding. This was surprisingly difficult and I had to request Guy's assitance in creating the outline for the doll. My 3rd grade skills failed me!
After all four sets were made, I had to create the dresses.
Next up, the hair! Also surprisingly tedious & difficult but so cute in the end.
I finished them off with little faces, names marking the dolls so the girls would know who they're standing with, and a personal note asking them to stand in my wedding. It was such a fun process and I was so excited to send them off and envision the girls opening them! I've already gotten fanstastic calls & messages which made all the hard work worthwhile.

yep, she's really that fabulous.

As if there was a question... I just need to put it out there.
Summer truly is THAT fabulous.
I am so happy that after a year of being blog buds, friends, and confidants that we finally got to meet! She was nothing short of sweet & welcoming. We met at her apartment (which is AMAZING btw) and went to a nearby Italian restaurant for dinner. I got to meet her sweet friend Sydney but she couldn't make dinner so Sum & I just go to catch up, giggle, and have a lovely dinner.
After we took a walk around her neighborhood, snapped a few pics, and finished off the evening on her rooftop so I could see the Brooklyn Bridge in all it's glory.

Summer.... thanks for being so sweet, welcoming, and FUN. You're adorable and I heart you lots.

oxfords: yay or nay?

I'm going to put it out there.
I just cannot get on board with the oxford trend.
On paper, they make sense. They're a throwback.
What's old is new.
A bit hipster.
Whatever. They're not cute.
They make your feet look like a hoagie sub.
BLAH.

WRONG.

Almost but no.

BOO.

The best of the bunch.. but still not great.

today's a good day!

And here's why:

1. I got a TON done last night, including my Save the Dates!

Last night was spent stamping, licking, writing, closing, piling, etc etc. And don't you love the stamps! I couldn't go for the cheesy wedding stamps. Not this girl. I also got the 'Charming' rubber stamp from Paperwink for our return address.... it turned out great!
I love it!
2. Anthropologie added new 'fresh cuts' to their sale section and two of the pieces I've been eyeballing were marked down!
Love this dress! I purchased it in navy.

Imagine this cozy thin knit cardigan in yellow, and pairing it with the navy dress above.

3. I get to see the beautiful Summer tomorrow! I'm headed to NYC for work and we're meeting up for dinner. So freaking excited.

4. Last night I also finished a little DIY project that I'll be posting later this week. It's damn good if I do say so myself!
