oatmeal cream pies...without the cream

I love Everyday Food magazine. Every month I find a plethora of recipes I want to try. This month's was no exception. I immediately saw an oatmeal cream pie recipe.
I loved these as a child. They were my favorite.
So when I had the opportunity to make these... I jumped at the chance.
The good news is that the cookies are delicious. The bad news is the frosting was notsomuch. I made two just so you could see what they're suppose to look like.... but left the rest so they'd be edible.

{the frosting was too much cream cheese...not enough sugar}
{fortunately the cookies were worthy of the effort!}
{these puppies were my dinner last night... and my breakfast this morning!}

i would've made them without the frosting too. not a big fan of creamy sugar or frosting but ALWAYS a fan of cookies for breakfast :)

yeah, ive made MS whoopie pies before (same concept) and the frosting was crap!
