hurry up chicken pot pie

Monday was a hectic evening between my wedding dress shopping (more on that later!) and Guy visiting a family member in the hospital. We wanted to make something good but also something that wouldn't take a lot of time.
Enter Paula Deen's Hurry Up Chicken Pot Pie
For as little effort it took... it was delicious! A perfect week night meal.

Paula Deen's Hurry Up Chicken Pie
2 cups chopped chicken
2 hard boiled eggs (we only used one)
1/2 frozen peas
1/2 cup thinly sliced carrots
1 can cream of chicken soup
1 cup chicken broth
salt & pepper
1 1/2 cups instant biscuit mix (we used bisquick)
1 cup milk
1 stick melted butter (we used 1/2 stick)

Preheat oven to 350
In a greased 2 quart casserole dish, layer the chicken, eggs, carrots, & peas. Mix the soup & chicken broth, and season with salt and pepper.  Pour over layers. Stir the biscuit mix and milk, & pour over the casserole. Drizzle butter over the topping. Bake until the topping is golden brown, 30-40 minutes. (Ours took 50+)

In other news... the dress shopping was amazing. I loved every minute of it and found two dresses that I absolutely fell in love with. How I'm going to choose between them?? No clue. I'm going back Wednesday to try them on again.... I already can't wait!

Oh my goodness--I don't even eat meat and that looks delicious! I can't believe it was so quick & easy. My neighbors (who are also vegetarian) make an unbelievable "chicken" pot pie (using Quorn fake chicken) in a pie shell and it is so freakin' good. Dammit. I'm trying to eat healthily these days, but this post just proves that life is way too short for dieting . . .
