delicious dish - sole almondine.

One of Guy's and my favorite Saturday morning things to do is to watch The Food Network and get dinner ideas for the week. We knew the minute we saw Tyler Florence's Sole Almondine that we wanted to make it for dinner on Sunday.
It. Was. Amazing.
If you like a white, flaky fish... this dish is for you! And it's paired with lemon smashed potatoes and parmesan green beans.
Here's what make the smashed potatoes special:
1. You use Yukon Gold potatoes.
2. You boil them in heavy cream & milk; not water.
3. You finish them off with half a lemon's worth of zest.

Guy doesn't love green beans but he loved these. Why, you ask? Because they were covered in parmesan cheese. See those little crusty bits? Yeah... that's cheese.
And they're so easy... cook for 20 minutes at 400 degrees.

I promise you'll love this fish. It's light and so flavorful.
