carmalized onion potato tart

Saturday morning I saw Tyler Florence making his Carmelized Onion Potato Tart and knew we had to make it immediately. We got the ingredients that day at the farmer's market and planned our dinner around this amazing side dish.
{saute your thinly cut onion}
{use your mandolin to slice your potatoes as thinly as you can}
{mix the sauted onions with your potatoes and gently layer & mix back in your pan}
{add salt & pepper & two tablespoons of butter}
{cover with wax paper and lightly grease top with olive oil to prevent burning}
{here's what it should look like after 45 minutes at 350}
{and here it is after you turn it over on a plate; beautifully golden & crispy!}

So there it is! And let me tell you, it was even better than we expected.
The best part - it cost us $2.27. All we had to buy were two potatoes and one onion; we already had the butter and oil. You can't beat that! It easily could feed four; we had over half of it left!

I should have eaten more for breakfast...that's making me so hungry! And, it reminds me of a dish that I've seen another chef on Food Network make. I can think of her name...blond hair, really spikey, kinda crazy. Anyway, she had a different name for hers but it looks DELISH!
